  • 6 bone-in, skin-on chicken thighs (about 2 pounds / 900 grams)
  • 1/3 cup (113 grams) honey
  • 1/4 cup (60 ml) low sodium soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons (30 ml) apple cider vinegar
  • 1/3 cup (80 ml) chicken broth
  • 1 teaspoon sesame oil (optional)
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening sauce)

Instructions

  1. Pat 6 bone-in, skin-on chicken thighs dry with paper towels and season lightly with salt and pepper. (10 minutes)
  2. Optional: Heat a skillet over medium-high heat and brown chicken thighs skin-side down for 3-4 minutes until golden, then flip and brown the other side for 2 minutes. (10 minutes)
  3. In a mixing bowl, whisk together honey, soy sauce, minced garlic, apple cider vinegar, chicken broth, sesame oil (if using), and red pepper flakes (if using) until well combined and glossy. (5 minutes)
  4. Place chicken thighs in the slow cooker, skin side up if not browned. Pour the honey garlic sauce evenly over the chicken. Cover with the lid. (5 minutes)
  5. Set the slow cooker to low and cook for 5-6 hours or until chicken is tender and cooked through (internal temperature 165°F / 74°C). (5-6 hours)
  6. About 15 minutes before serving, mix cornstarch with cold water to create a slurry. Pour into the slow cooker and stir gently. Replace the lid and cook on high for 10-15 minutes until sauce thickens to a sticky glaze. (15-20 minutes)
  7. Spoon the sticky honey garlic sauce over the chicken thighs and garnish with chopped green onions or sesame seeds if desired. (2 minutes)

Notes

Avoid opening the slow cooker lid frequently to prevent heat loss. The sauce will thicken beautifully with the cornstarch slurry step. Browning the chicken is optional but adds extra flavor. For a thicker glaze, reduce the sauce on the stove after slow cooking. Use tamari or coconut aminos for gluten-free version. Boneless thighs cook faster; reduce cooking time by about 30 minutes.
