Savory BBQ Pulled Pork Sliders with Tangy Vinegar Slaw

A simple and delicious slow cooker pulled pork sandwich paired with a bright, tangy vinegar slaw. Perfect for gatherings and easy to prepare ahead.

  • 4 lbs pork shoulder (pork butt), trimmed of excess fat
  • 1 cup barbecue sauce (smoky, slightly spicy)
  • 1/2 cup apple cider vinegar
  • 2 tbsp brown sugar
  • 1 tbsp smoked paprika
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional: 1/2 tsp cayenne pepper
  • 3 cups shredded green cabbage (about half a medium head)
  • 1 cup shredded carrot (about 2 medium carrots)
  • 1/2 small red onion, thinly sliced
  • 1/4 cup apple cider vinegar
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: 1 tbsp olive oil
  • 12 slider buns or dinner rolls, lightly toasted
  • Optional: pickles or jalapeรฑos

Instructions

  1. In a small bowl, mix smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using). Rub the spice blend all over the pork shoulder.
  2. Place the pork shoulder in the slow cooker. Pour apple cider vinegar and barbecue sauce over it, then sprinkle brown sugar evenly. Poke the pork with a fork to help flavors penetrate.
  3. Cook on low for 6 to 8 hours or on high for 4 to 5 hours until pork is fork-tender.
  4. While pork cooks, combine shredded cabbage, carrot, and red onion in a large bowl.
  5. In a smaller bowl, whisk apple cider vinegar, sugar, salt, black pepper, and olive oil (if using). Pour dressing over veggies and toss well. Refrigerate for at least 30 minutes.
  6. Once pork is cooked, transfer to a cutting board or bowl and shred with two forks or tongs.
  7. Return shredded pork to slow cooker and stir into juices.
  8. Lightly toast slider buns in a skillet, under broiler, or on grill for 1-2 minutes.
  9. Assemble sliders by spooning pulled pork onto bottom buns, topping with vinegar slaw, and finishing with top buns. Add pickles or jalapeรฑos if desired.

Notes

If barbecue sauce is thick, stir in some cooking juices to loosen. Let slaw rest at least 30 minutes to soften cabbage without losing crunch. Toast buns to prevent sogginess. For oven method, roast pork in covered Dutch oven at 275ยฐF for 4-5 hours, basting occasionally.
