  • 3 tablespoons unsalted butter, divided
  • 2 cloves garlic, minced
  • ยฝ cup (120 ml) dry white wine or chicken broth
  • Juice of 1 large lemon (about 3 tablespoons)
  • 2 tablespoons capers, drained
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Place chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to gently pound them to about ยผ-inch (6 mm) thickness (~5 minutes).
  2. Season both sides of the chicken with salt and pepper. Pour the flour into a shallow bowl and dredge each piece, shaking off any excess flour (~5 minutes).
  3. Warm 2 tablespoons of olive oil over medium-high heat in a skillet. Once hot, add the chicken breasts gently, working in batches if needed to avoid overcrowding (~1-2 minutes to heat).
  4. Sear each side for about 3 minutes until golden brown and cooked through. Transfer to a plate and tent with foil to keep warm (~6 minutes total).
  5. Reduce heat to medium. Add 1 tablespoon of butter and the minced garlic to the same pan. Sautรฉ for about 30 seconds until fragrant but not browned.
  6. Pour in the white wine or chicken broth, scraping up browned bits from the pan with a wooden spoon. Let it simmer and reduce by half, about 3 minutes.
  7. Stir in the fresh lemon juice and capers. Let the sauce bubble gently for another 2 minutes.
  8. Remove from heat and whisk in the remaining 2 tablespoons of butter until melted and velvety.
  9. Return the chicken to the pan briefly to coat with sauce. Sprinkle with chopped parsley and serve immediately.

If sauce is too thin, simmer longer to thicken; if too thick, add a splash more broth or water. Rinse capers to reduce saltiness if desired. Use moderate heat to avoid burning garlic.
