  • 3 tablespoons honey
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon olive oil
  • Freshly ground black pepper, to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Pat your pork tenderloin dry with paper towels and trim any silver skin or excess fat. Season lightly with about ¼ teaspoon black pepper on all sides.
  2. In a small bowl, whisk together honey, minced garlic, soy sauce, and rice vinegar until well combined. Set aside.
  3. Place a cast iron skillet over medium-high heat and add olive oil. Heat for about 2 minutes until hot but not smoking.
  4. Add the pork tenderloin to the pan and sear for 3-4 minutes on each side until a deep golden crust forms.
  5. Reduce heat to medium-low. Brush the glaze generously over the pork. Continue cooking, turning and glazing every 2-3 minutes, for about 8-10 minutes total until the glaze thickens and the pork reaches an internal temperature of 145°F (63°C).
  6. Remove the pork from the pan and let it rest on a cutting board for 5 minutes to redistribute juices.
  7. Slice the tenderloin into medallions and spoon any extra glaze from the pan over the top before serving.

Notes

Patting the pork dry before searing helps achieve a beautiful crust. Use medium-low heat when glazing to prevent honey from burning. Brush glaze on instead of pouring to build flavor layers. Let the pork rest after cooking to keep it juicy. Add a splash of water or soy sauce if glaze thickens too much or starts to burn.
