  • 4 cups (950 ml) ice water

Instructions

  1. Rinse 4-5 medium Kirby cucumbers and slice into spears or rounds about 1/4-inch thick. Place sliced cucumbers into a large bowl filled with 4 cups (950 ml) of ice water. Soak for 1 to 2 hours to lock in crisp texture.
  2. In a small saucepan, combine 2 cups (480 ml) white vinegar, 2 cups (480 ml) water, 2 tablespoons kosher salt, and 1 tablespoon granulated sugar. Heat gently over medium heat, stirring until salt and sugar dissolve. Remove from heat and cool to room temperature.
  3. Drain cucumbers from ice water and pat dry with a clean towel to avoid watering down the brine. Layer cucumbers into clean quart-sized mason jars or airtight containers.
  4. Add 3-4 smashed garlic cloves, 3-4 sprigs fresh dill, 1 teaspoon black peppercorns, 1 teaspoon mustard seeds (optional), and 1/4 teaspoon red pepper flakes (optional) evenly between jars.
  5. Pour cooled brine over cucumbers in each jar, ensuring they are fully submerged. Leave about 1/2 inch of space at the top for expansion.
  6. Seal jars tightly and refrigerate. Let pickles sit for at least 24 hours before tasting. Flavor builds as they chill.
  7. Enjoy chilled straight from the fridge. Pickles keep up to 2 weeks refrigerated, best within the first week for peak crunch.
