Instructions

  1. Preheat your oven to 325ยฐF (163ยฐC). Line a 9×13-inch baking pan with parchment paper, leaving a slight overhang on the sides for easy removal.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until the mixture resembles wet sand and holds together when pressed.
  3. Press the crust mixture evenly into the bottom of the prepared pan. Bake for 10 minutes until lightly golden. Remove from oven and let cool slightly.
  4. In a large bowl, beat softened cream cheese until smooth and creamy. Add sugar and beat until well combined.
  5. Add eggs one at a time, mixing on low speed after each addition. Stir in vanilla extract, flour, and sour cream. Mix until just combined.
  6. Pour the filling over the cooled crust and smooth with a spatula.
  7. Arrange the berries to create the stars and stripes: lay sliced strawberries in neat horizontal rows for the red stripes and cluster blueberries in the top left corner to mimic the stars.
  8. Bake the bars for 35โ€“40 minutes until the edges are set but the center has a slight jiggle.
  9. Let the bars cool completely at room temperature, then refrigerate for at least 3 hours or overnight.
  10. Use the parchment overhang to lift the bars from the pan. Slice into 12โ€“16 squares with a sharp knife, wiping it clean between cuts for neat edges.

Use room temperature cream cheese and eggs to avoid lumps. Do not overmix after adding eggs to prevent cracks. Chilling overnight is essential for firm bars and better flavor.
