  • 2 cups heavy whipping cream, cold
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • Additional sliced strawberries for decoration

Instructions

  1. Preheat oven to 350°F (175°C). Prepare cake batter according to box instructions by combining cake mix with eggs, oil, and water. Beat with electric mixer for about 2 minutes until smooth.
  2. Pour batter evenly into a greased 9×13 inch baking pan. Bake for 25-30 minutes or until a toothpick inserted near the center comes out clean.
  3. Let the cake cool completely on a wire rack, about 1 hour.
  4. Dissolve strawberry gelatin powder in 1 cup boiling water. Stir until completely dissolved and let cool for about 10 minutes until warm but not hot.
  5. Stir diced fresh strawberries into the cooled gelatin mixture.
  6. Use the handle of a wooden spoon or fork to poke holes about 1 inch apart all over the cooled cake surface, piercing but not breaking the cake apart.
  7. Slowly pour the cooled strawberry gelatin mixture evenly over the poked cake, allowing it to seep into the holes.
  8. Chill the cake in the refrigerator for at least 2 hours to let the gelatin set.
  9. In a chilled mixing bowl, combine cold heavy cream, powdered sugar, and vanilla extract. Beat with an electric mixer on medium-high speed until stiff peaks form, about 3-5 minutes. Avoid overbeating.
  10. Spread whipped cream evenly over the chilled cake.
  11. Decorate the top with fresh blueberries and sliced strawberries arranged in red, white, and blue patterns.
  12. Refrigerate the assembled cake for another 30 minutes before serving to let flavors meld and whipped cream firm up.

Use cold bowls and beaters when whipping cream for best results. Let gelatin cool to warm before pouring to avoid soggy cake. Poke holes about 1 inch apart but not too deep. Chill cake well to set gelatin and firm whipped cream. Fresh ripe berries improve flavor; frozen berries can be used if thawed and drained.
