  • ½ cup (90 g) mini chocolate chips (optional but recommended)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your muffin tin or line it with paper liners.
  2. Grate the zucchini using a box grater or food processor. Press it gently in a clean kitchen towel to remove excess moisture.
  3. In a large bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking powder, baking soda, and salt.
  4. In a separate bowl, whisk the granulated sugar, vegetable oil, eggs, and vanilla extract until smooth and slightly frothy.
  5. Fold the grated zucchini into the wet ingredients until combined.
  6. Slowly add the dry ingredients to the wet ingredients, folding gently with a spatula until no dry streaks remain. Avoid overmixing.
  7. Fold in the mini chocolate chips.
  8. Spoon the batter evenly into the prepared muffin tin, filling each cup about ¾ full.
