Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper, leaving an overhang to lift the cake easily once baked.
  2. Shred about 1 ½ cups (225g) of zucchini using a box grater. Place the shredded zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
  3. In a large bowl, sift together 1 ¾ cups (220g) all-purpose flour, ¾ cup (65g) cocoa powder, 1 ½ teaspoons baking soda, ½ teaspoon baking powder, and ½ teaspoon salt. Whisk to combine evenly and set aside.
  4. In a separate bowl, beat 2 large eggs with 1 cup (200g) granulated sugar until smooth and lighter in color, about 2 minutes. Add ½ cup (120ml) vegetable oil and 1 teaspoon vanilla extract, mixing well.
