  • 1 cup medium zucchini, grated and squeezed dry
  • 1 3/4 cups (220 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt
  • 1/2 cup (100 g) granulated sugar
  • 1/4 cup (50 g) packed brown sugar
  • 1/3 cup (80 ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup (130 g) chocolate chips (semi-sweet or dark)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper for easy removal.
  2. Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
  3. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt. Set aside.
  4. In a large bowl, combine the mashed bananas, grated zucchini, granulated sugar, brown sugar, and vegetable oil. Mix gently until just combined.
  5. Add eggs one at a time, beating lightly after each addition. Stir in vanilla extract.
  6. Gradually fold the dry ingredients into the wet using a spatula. Mix gently to avoid overmixing.
  7. Fold in the chocolate chips, reserving a few to sprinkle on top.
  8. Pour the batter into the prepared loaf pan, smoothing the top. Sprinkle the reserved chocolate chips evenly over the surface.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs but no wet batter. Start checking at 50 minutes.
  10. Remove from oven and let cool in the pan for 10 minutes before transferring to a cooling rack.

Squeeze out excess moisture from zucchini to prevent sogginess. Fold dry ingredients gently to avoid tough bread. Use semi-sweet chocolate chips for balanced sweetness.
