Healthy Whole Wheat Zucchini Muffins with Walnuts

Moist and light whole wheat muffins packed with fresh zucchini and crunchy walnuts, flavored with cinnamon and vanilla. Perfect for a wholesome breakfast or snack.

  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (100g) granulated sugar
  • ½ cup (120g) plain Greek yogurt, preferably full-fat
  • ⅓ cup (80ml) vegetable oil (canola or sunflower preferred)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups grated zucchini (about 2 medium zucchinis), lightly squeezed to remove excess moisture
  • ¾ cup (80g) chopped walnuts, lightly toasted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or lightly grease it.
  2. Grate the zucchini using a box grater or food processor. Place grated zucchini in a clean kitchen towel and gently squeeze to remove excess moisture, leaving some moisture for tenderness.
  3. In a large bowl, whisk together whole wheat flour, baking powder, baking soda, ground cinnamon, salt, and granulated sugar.
  4. In a medium bowl, whisk eggs with Greek yogurt, vegetable oil, and vanilla extract until smooth.
  5. Stir grated zucchini and chopped walnuts into the wet mixture until evenly combined.
  6. Pour the wet ingredients into the dry ingredients bowl. Gently fold together with a spatula until just combined; a few lumps are fine. Avoid overmixing.
  7. Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.
  8. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Squeeze zucchini gently to remove excess moisture but retain some for tender muffins. Lightly toast walnuts for enhanced flavor. Use room temperature eggs and yogurt for better mixing and rise. Tent muffins with foil if browning too quickly. Avoid overmixing batter to prevent dense muffins.
