These fudgy zucchini brownies combine rich chocolate flavor with moist zucchini for a delicious and slightly healthier dessert. Topped with a silky dark chocolate glaze, they are perfect for sneaking veggies into a sweet treat.

  • 2 cups grated zucchini (about 2 medium zucchinis), lightly squeezed
  • 1 cup (120g) all-purpose flour (can substitute almond flour for gluten-free)
  • 3/4 cup (65g) unsweetened cocoa powder, preferably Dutch-processed
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar
  • 1/2 cup (115g) unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • For the glaze:
  • 1/2 cup (90g) dark chocolate chips or chopped dark chocolate (at least 60% cacao)
  • 1/3 cup (80ml) heavy cream, warmed
  • 1 tablespoon butter, softened

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease an 8×8-inch (20×20 cm) baking pan or line with parchment paper.
  2. Grate zucchini and squeeze gently to remove excess water, leaving it damp but not dripping.
  3. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
  4. In a large bowl, whisk eggs, granulated sugar, brown sugar, melted butter, and vanilla extract until smooth.
  5. Fold grated zucchini into the wet mixture, then gently fold in the dry ingredients until just combined.
  6. Pour batter into prepared pan and spread evenly.
  7. Bake for 30-35 minutes, checking at 25 minutes; a toothpick should come out with a few moist crumbs.
  8. Cool brownies completely on a wire rack before glazing.
  9. To make glaze, heat heavy cream until just simmering, remove from heat, add chopped chocolate, let sit 2 minutes, then stir until smooth. Stir in softened butter for shine.
  10. Pour glaze over cooled brownies and spread evenly. Let set at room temperature or chill briefly for firmer finish.
  11. Slice into 16 squares and serve.
