Fresh Grilled Peach and Burrata Salad with Honey Balsamic Dressing

A light and elegant salad featuring smoky grilled peaches, creamy burrata, and a sweet-savory honey balsamic dressing. Perfect for quick summer meals or impromptu gatherings.

  • 3 to 4 ripe but firm peaches, halved and pitted
  • 8 ounces fresh burrata cheese, drained
  • 4 cups mixed greens (arugula or baby spinach), washed and dried
  • 2 tablespoons raw honey
  • 3 tablespoons aged balsamic vinegar
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon chopped fresh basil or thyme
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: toasted pine nuts or walnuts for crunch
  • Optional: splash of lemon juice to brighten the dressing

Instructions

  1. Preheat the grill or grill pan over medium-high heat for about 5 minutes until hot.
  2. Rinse peaches and slice them in half, removing the pits carefully. Brush the cut sides lightly with olive oil.
  3. Place peaches cut side down on the grill. Grill for 3-4 minutes until grill marks appear and peaches start to soften. Flip and grill the skin side for another 2 minutes. Remove and let cool slightly.
  4. In a small bowl, whisk together honey, balsamic vinegar, olive oil, chopped herbs, salt, and pepper until emulsified. Adjust sweetness or acidity as desired.
  5. Arrange mixed greens on a serving platter. Tear or slice burrata into large pieces and scatter over the greens.
  6. Slice grilled peaches into wedges and place on top of the greens and burrata.
  7. Drizzle the honey balsamic dressing over the entire salad. Add extra cracked black pepper and sea salt to finish. Optionally, scatter toasted nuts for crunch.
  8. Serve immediately while peaches are warm and burrata is creamy.

Notes

Brush peaches lightly with olive oil to prevent sticking and encourage caramelization. Use ripe but firm peaches for best texture. Tear burrata instead of slicing for a rustic look and creamy texture. Dressing can be made up to 2 days ahead and whisked before use. Serve salad immediately for best flavor and texture.
