  • 2 cups (480 ml) plain Greek yogurt (full-fat or 2%)
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 cup (150 g) mixed berries (blueberries, raspberries, sliced strawberries), fresh or frozen
  • 1/2 cup (50 g) honey granola
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Line a 9×13 inch (23×33 cm) baking sheet with parchment paper, leaving some overhang for easy removal.
  2. In a medium bowl, stir together Greek yogurt, honey, and vanilla extract until smooth and slightly glossy. Fold in lemon zest if using.
  3. Gently fold mixed berries into the yogurt mixture, being careful not to crush them.
  4. Pour the mixture onto the prepared pan and spread evenly to about 1/4 inch (6 mm) thickness.
  5. Sprinkle honey granola evenly over the top and press lightly to adhere without crushing.
  6. Freeze the tray for at least 4 hours or overnight until fully set and firm.
  7. Use the parchment paper overhang to lift the bark out of the pan and break into 10-12 irregular pieces.
  8. Serve immediately or store in an airtight container in the freezer for up to 2 weeks.

Notes

Use thick Greek yogurt to avoid icy texture. Fold berries gently to prevent color bleeding. Press granola lightly to keep crunch. Freeze overnight for best results. Use parchment paper for easy removal. Let bark sit a minute before eating if too hard.
