  • 1 can (15 oz / 425 g) whole kernel corn, drained
  • 1 cup (150 g) cherry tomatoes, quartered
  • 1 small red bell pepper, finely diced
  • 1 small green bell pepper, finely diced
  • 1/4 cup (40 g) red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup (15 g) fresh cilantro, chopped
  • 3 tablespoons fresh lime juice (about 12 limes)
  • 2 tablespoons olive oil (extra virgin)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 6 small corn tortillas, cut into wedges
  • 2 tablespoons vegetable oil or avocado oil (for frying or baking)
  • Salt, to taste

Instructions

  1. Cut the corn tortillas into 6 wedges each.
  2. Heat 2 tablespoons of oil in a large skillet over medium-high heat. When the oil shimmers, carefully add the tortilla wedges in batches without crowding.
  3. Fry for about 1-2 minutes on each side until golden and crispy. Use tongs to flip and transfer chips to a paper towel-lined plate to drain excess oil. Sprinkle with salt immediately.
  4. Or bake the chips: Preheat oven to 375°F (190°C). Toss tortilla wedges with oil and salt, spread in a single layer on a parchment-lined baking sheet.
  5. Bake 10-12 minutes, flipping halfway, until crisp and lightly browned.
  6. In a medium bowl, combine the drained black beans, corn, cherry tomatoes, diced bell peppers, red onion, jalapeño (if using), and chopped cilantro.
  7. In a small bowl, whisk together fresh lime juice, olive oil, ground cumin, smoked paprika, garlic powder, salt, and black pepper. Adjust seasoning to taste.
  8. Pour the dressing over the veggie and bean mix. Gently toss until everything is evenly coated.
  9. Refrigerate the dip for at least 15 minutes to let flavors meld. Serve chilled or at room temperature with the crispy tortilla chips on the side.

Notes

For best results, fry tortilla chips at about 350°F (175°C) in small batches to maintain oil temperature. Pat tomatoes dry to avoid watery dip. Avoid over-mixing to keep beans intact. Dip tastes best after chilling for at least 15 minutes or longer. Store chips separately to keep them crispy.
