Instructions

  1. Trim the brisket flat, removing large chunks of hard fat but leaving about ยผ inch of fat for moisture (10โ€“15 minutes).
  2. In a medium bowl, combine coffee, chili powder, brown sugar, smoked paprika, kosher salt, black pepper, garlic powder, and onion powder. Mix thoroughly.
  3. Pat the brisket dry with paper towels. Generously coat the entire surface with the dry rub, pressing it gently into the meat. Let sit at room temperature for 30 to 45 minutes.
  4. Preheat smoker or grill to 225โ€“250ยฐF. Add wood chips or chunks for smoke flavor, ensuring smoke is thin and blue.
  5. Place brisket fat side up on smoker grates. Smoke for 3 to 4 hours, maintaining temperature. Every hour, check internal temperature and spritz with apple cider vinegar or beef broth to keep moist.
  6. When internal temperature reaches about 160ยฐF and bark is well-formed, wrap brisket tightly in aluminum foil or butcher paper.
  7. Return wrapped brisket to smoker and continue cooking until internal temperature reaches 195โ€“205ยฐF, about 2 to 3 more hours.
  8. Remove brisket from smoker and let rest, wrapped, for at least 1 hour to redistribute juices.
  9. Slice brisket thinly against the grain and serve.
