  • 2 tablespoons packed brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 2 teaspoons kosher salt (medium-coarse recommended)
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil

Instructions

  1. Trim excess fat from the brisket flat, leaving about 1/4-inch of fat for moisture (about 10 minutes).
  2. Pat the brisket dry thoroughly with paper towels to help the rub stick and promote crust formation.
  3. In a mixing bowl, combine coffee grounds, chili powder, smoked paprika, brown sugar, garlic powder, onion powder, cumin, kosher salt, and black pepper. Stir until well blended.
  4. Lightly coat the brisket with olive oil to help the rub cling evenly.
  5. Generously massage the coffee-chili dry rub all over the brisket flat, covering every surface with a thick layer.
  6. Let the rubbed brisket rest at room temperature for 30 minutes to absorb flavors. Meanwhile, preheat your smoker to 225ยฐF (107ยฐC).
  7. Place the brisket fat-side up on the smoker grate. Maintain steady temperature between 225-250ยฐF (107-121ยฐC). Smoke until internal temperature reaches 165ยฐF (74ยฐC), about 6 hours. Add wood chips (hickory or oak) every hour for consistent smoke.
  8. Once 165ยฐF is reached, wrap the brisket tightly in butcher paper or foil to retain moisture. Return to smoker.
  9. Continue smoking until internal temperature hits 203ยฐF (95ยฐC), about 2-3 more hours to ensure tenderness.
  10. Remove from smoker and let brisket rest, wrapped, for at least 1 hour to allow juices to redistribute.
  11. Slice thinly against the grain for best tenderness. Serve warm with your favorite sides or barbecue sauce.

Keep a spray bottle filled with apple juice or apple cider vinegar to spritz the meat during smoking to maintain moisture and add subtle tang. Use medium-coarse kosher salt and freshly ground black pepper for best flavor. Wrap brisket at 165ยฐF to retain moisture and speed cooking through the stall phase. Rest brisket for at least 1 hour after smoking to redistribute juices. For oven method, slow cook at 250ยฐF (121ยฐC) for 6-8 hours wrapped tightly in foil with beef broth splash.
