  • 1 ½ cups (300g) granulated sugar
  • 4 large eggs, room temperature
  • 2 cups (240g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ cup (60ml) fresh lemon juice
  • 2 tbsp lemon zest
  • ½ cup (120ml) buttermilk, room temperature
  • 1 cup (150g) fresh strawberries, pureed
  • For the Lemon Glaze:
  • 1 cup (120g) powdered sugar
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. Cream the butter and sugar in a large bowl using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  3. Add eggs one at a time, beating well after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. In a small bowl, mix lemon juice, lemon zest, buttermilk, and pureed strawberries until smooth.
  6. With the mixer on low, alternately add the dry ingredients and wet mixture to the butter mixture, starting and ending with dry ingredients.
  7. Fold the batter gently with a spatula to combine evenly.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 55-65 minutes, checking doneness with a toothpick; it should come out clean or with a few moist crumbs.
  10. Cool the cake in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  11. Prepare the glaze by whisking powdered sugar, lemon juice, and vanilla extract until smooth.
  12. Drizzle the glaze over the cooled cake and let it set for about 20 minutes before slicing.

Use fresh, ripe strawberries for best flavor. Do not glaze the cake while warm to prevent melting. Softened butter and room temperature eggs are key for a tender crumb. Check baking time closely to avoid dryness. For gluten-free, substitute flour with a gluten-free blend. For dairy-free, swap butter and buttermilk with vegan alternatives.
