Flavorful Fig Preserves Recipe with Cardamom and Orange Zest

A quick and easy homemade fig preserves recipe featuring ripe figs, aromatic cardamom, and bright orange zest. Perfect for toast, cheese boards, or gift-giving.

  • 2 pounds fresh ripe figs, washed and quartered
  • 1 cup granulated sugar
  • 1 tablespoon fresh orange zest
  • 1/2 teaspoon ground cardamom
  • 2 tablespoons fresh lemon juice
  • 1/4 cup water

Instructions

  1. Wash the fresh figs gently and pat dry. Cut off the stems and quarter each fig into bite-sized pieces.
  2. In a large heavy-bottomed saucepan, combine the quartered figs, sugar, water, lemon juice, and orange zest. Stir gently to mix.
  3. Place the pot over medium heat and bring to a gentle boil. Stir frequently to prevent sticking. Cook for 20-25 minutes until the mixture thickens and the figs break down.
  4. Stir in the ground cardamom and continue cooking for another 5-10 minutes, stirring often, until the preserve coats the back of a spoon.
  5. Test the set by placing a small spoonful on a chilled plate; if it wrinkles when pushed with a finger, it is ready. If not, cook a few more minutes and test again.
  6. Sterilize glass jars by boiling or running through a hot dishwasher cycle.
  7. Ladle the hot preserves into sterilized jars, leaving about 1/4 inch headspace. Seal with lids while still warm.
  8. Let jars cool at room temperature. Store in the refrigerator for up to 3 weeks or process in a water bath for longer shelf life.

Notes

Stir gently but consistently to prevent sticking and burning. Add cardamom near the end to preserve its aroma. Test the set with a chilled plate to ensure proper thickness. Use frozen figs if fresh are unavailable, thaw and drain before use. Honey can substitute sugar but will affect color and flavor.
