  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 2 tablespoons fresh lemon juice
  • 1 cup all-purpose flour (for topping)
  • 1 cup packed brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small cubes

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC). Lightly grease an 8×8 or 9×9 baking dish with butter or non-stick spray.
  2. Wash zucchini, trim ends, and grate using the large holes of a box grater or food processor. Do not peel.
  3. In a large bowl, combine grated zucchini, granulated sugar, 1/4 cup flour, cinnamon, and lemon juice. Stir until evenly coated.
  4. In a separate medium bowl, whisk together 1 cup flour, brown sugar, baking powder, and salt. Add cold butter cubes and cut in with a pastry cutter or two forks until mixture resembles coarse crumbs with some pea-sized butter pieces.
  5. Pour zucchini filling into prepared dish and spread evenly. Sprinkle crumb topping evenly over the filling.
  6. Place dish on a baking sheet. Bake for 40-45 minutes, until filling is bubbly and topping is golden brown and firm.
  7. Cool on a wire rack for at least 15-20 minutes before serving.

Notes

Do not squeeze the zucchini dry; the moisture creates the syrup. Use cold butter for a flaky topping. Let the cobbler rest before serving to allow the filling to set. If topping browns too quickly, tent with foil for the last 10 minutes.
