  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup (57 g) unsalted butter, melted and slightly cooled
  • 1/2 cup (100 g) packed brown sugar
  • 2 tablespoons (25 g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg yolk
  • 1/2 cup (90 g) semisweet chocolate chips

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and line your baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt until well combined and free of lumps.
  3. In a separate bowl, whisk melted butter with brown sugar and granulated sugar until smooth and slightly glossy. Stir in vanilla extract and egg yolk.
  4. Add the flour mixture to the wet ingredients in two parts, folding gently with a spatula just until combined. Avoid overmixing.
  5. Fold in the semisweet chocolate chips evenly into the dough.
  6. Using a tablespoon or small cookie scoop, drop rounded dough balls about 2 inches apart onto the prepared baking sheet.
  7. Bake for 9-11 minutes, or until edges are just golden and centers look soft but set.
  8. Let cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For chewier cookies, remove from oven at 9 minutes when centers are puffed but soft. For crisper edges, bake closer to 11 minutes. Avoid overmixing dough to prevent toughness. Dough can be frozen before baking; bake from frozen adding a couple extra minutes.
