  • 2 medium zucchinis, sliced into half-moons
  • 4 cloves garlic, minced
  • 3 tablespoons honey
  • 2 tablespoons soy sauce (or tamari/coconut aminos for gluten-free)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering, about 2-3 minutes.
  3. Place chicken thighs skin-side down in the pan and cook without moving for 5-7 minutes until the skin is golden and crisp.
  4. Flip the chicken and add minced garlic around the edges; sauté for about 30 seconds to release fragrance.
  5. Stir in honey, soy sauce, and apple cider vinegar; baste the chicken with the sauce. Lower heat to medium and cook for another 8-10 minutes, spooning sauce over the chicken occasionally.
  6. Nestle zucchini slices around the chicken and stir gently in the sauce. Cook for 4-5 minutes until zucchini is tender but still crisp.
  7. Optional: Broil the skillet for 2-3 minutes to caramelize the chicken skin, watching closely to prevent burning.
  8. Remove from heat and let the chicken rest for a few minutes before serving.
