Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and grease your loaf pan or line it with parchment paper.
  2. Grate the zucchini using the coarse side of your box grater or pulse in a food processor until finely shredded. If very watery, squeeze out some moisture using a clean kitchen towel or paper towels.
  3. In a large mixing bowl, combine the flour, baking soda, baking powder, salt, and cinnamon. Whisk lightly to mix evenly.
  4. Add the granulated sugar and brown sugar to the dry ingredients and stir together.
  5. Make a well in the center of the dry ingredients and add the eggs, vegetable oil, and vanilla extract. Stir gently with a wooden spoon or spatula until just combined; avoid overmixing.
  6. Fold in the grated zucchini and chocolate chips carefully to distribute evenly.
