Instructions

  1. Gather your ingredients: Measure out oats, peanut butter, honey, cocoa powder, vanilla, flaxseed meal, salt, and chocolate chips if using.
  2. Combine dry ingredients: In your mixing bowl, stir together the oats, cocoa powder, flaxseed meal, salt, and mini chocolate chips until evenly mixed.
  3. Add wet ingredients: Pour in the peanut butter, honey, and vanilla extract. Using a sturdy spoon or spatula, mix everything until the oats are fully coated and the mixture sticks together. This should take about 3โ€“5 minutes. If it feels too dry, add a teaspoon of honey or a bit more peanut butter; if too wet, sprinkle in some more oats.
  4. Test the mixture: Pinch a small amount and try to form a ball. It should hold its shape without crumbling or feeling greasy. This is your texture checkpoint.
  5. Form the energy bites: Roll the mixture into approximately 1-inch (2.5 cm) balls using your hands. You should get about 18โ€“20 bites depending on size.
  6. Chill: Place the formed bites on a baking sheet or plate and refrigerate for at least 30 minutes. This helps them firm up and makes them easier to handle.
