These easy no-bake chocolate almond protein balls are a quick, healthy snack made with simple pantry staples, offering a perfect balance of nutty, chocolatey flavor and satisfying chewiness.

Ingredients

Scale
  • 1 cup almond butter (smooth or crunchy)
  • 1 cup rolled oats (old-fashioned)
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup honey or maple syrup
  • 1/2 cup chopped almonds (finely chopped but not powdered)
  • 1 teaspoon vanilla extract
  • 2 tablespoons chia seeds (optional)
  • 1/3 cup protein powder (unflavored or chocolate-flavored)
  • Pinch of salt

Instructions

  1. Measure out all ingredients: 1 cup almond butter, 1 cup rolled oats, 1/4 cup cocoa powder, 1/3 cup honey, 1/2 cup chopped almonds, 1 teaspoon vanilla extract, 2 tablespoons chia seeds (optional), 1/3 cup protein powder, and a pinch of salt. Ensure almond butter is at room temperature for easy mixing.
  2. In a mixing bowl, combine almond butter, honey, and vanilla extract. Stir until smooth and creamy.
  3. Add oats, cocoa powder, protein powder, chia seeds, chopped almonds, and salt. Stir gently but thoroughly until evenly combined. The mixture should hold together when pressed but not be overly wet or crumbly. Adjust with a teaspoon of honey or almond milk if too dry, or more oats if too wet.
  4. Form the mixture into 1-inch balls using your hands or a small cookie scoop. Place on a baking sheet or plate lined with parchment paper. Wet hands lightly if mixture sticks.
  5. Refrigerate the balls for at least 30 minutes to firm up and allow flavors to meld.
  6. Enjoy chilled or at room temperature. Store leftovers in an airtight container in the fridge for up to 7 days.

Notes

Use certified gluten-free oats for gluten-free version. Swap honey with maple syrup or agave for vegan option. Chopping almonds by hand preserves texture better than processing. Adjust sweetness by varying honey amount. If mixture is too dry or wet, adjust with honey, almond milk, or oats accordingly. Store in airtight container in fridge up to 7 days or freeze up to 3 months.
