Instructions

  1. Preheat the oven to 350°F (175°C). Position the oven rack in the middle and grease the muffin tin cups with olive oil or cooking spray.
  2. Roughly chop 2 cups of fresh spinach. Optionally, sauté spinach lightly for 1-2 minutes to wilt and reduce moisture.
  3. Crack 8 large eggs into a mixing bowl. Add 1/4 cup milk, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and optional 1/4 teaspoon garlic powder. Whisk until well combined and slightly frothy, about 30 seconds.
  4. Fold in the chopped spinach and 1 cup shredded cheese gently, ensuring even distribution without overmixing.
  5. Pour the egg mixture evenly into the greased muffin tin cups, filling each about 3/4 full.
  6. Bake for 20-22 minutes. Check doneness by inserting a toothpick in the center; it should come out clean and the tops should be set but not overly browned.
  7. Let the egg muffin cups cool for 5 minutes in the tin. Run a knife around the edges to loosen and use a spoon to lift them out if needed.
