  • 1 medium sweet potato, peeled and cubed
  • 1 red bell pepper, chopped
  • 1 zucchini, sliced into half-moons
  • 1 red onion, cut into wedges
  • 2 cups broccoli florets (fresh or frozen)
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 1 ยฝ cups cooked quinoa or brown rice
  • 3 tablespoons tahini
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 teaspoon maple syrup or honey
  • 2 tablespoons water
  • Pinch of salt
  • Optional toppings: chopped fresh parsley or cilantro, toasted pumpkin seeds or chopped nuts, avocado slices

Instructions

  1. Preheat your oven to 425ยฐF (220ยฐC).
  2. Peel and cube the sweet potato into roughly 1-inch pieces. Chop the bell pepper, slice the zucchini, cut the onion into wedges, and break broccoli into bite-sized florets.
  3. In a large bowl, combine the chopped vegetables. Drizzle with olive oil, then sprinkle smoked paprika, garlic powder, salt, and pepper. Toss until evenly coated.
  4. Spread the veggies in a single layer on a baking sheet. Roast for 25-30 minutes, stirring halfway through, until tender and edges are golden brown.
  5. While the veggies roast, rinse ยพ cup dry quinoa under cold water. Add to a medium saucepan with 1 ยฝ cups water and a pinch of salt. Bring to a boil, reduce to a simmer, cover, and cook for 15 minutes or until water is absorbed. Fluff with a fork and set aside.
  6. In a small bowl, whisk together tahini, lemon juice, maple syrup, water, and salt until smooth and creamy. Adjust water to desired consistency.
  7. Divide the cooked quinoa between meal prep containers. Top evenly with roasted veggies. Drizzle each bowl with tahini dressing and add optional toppings if desired.
  8. Seal containers and refrigerate for up to 4 days. Enjoy cold or gently reheat in the microwave for 1-2 minutes.

Notes

Roast veggies at high heat for caramelization and flavor. Toss veggies halfway through roasting for even cooking. Rinse quinoa before cooking to avoid bitterness. Adjust dressing thickness with water. Let food cool before sealing containers to avoid sogginess. Reheat uncovered in microwave for best texture.
