  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 ½ cups salsa (medium heat)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste
  • Optional: 1 tbsp fresh lime juice

Instructions

  1. Rinse and pat dry the chicken breasts or thighs.
  2. In a small bowl, combine ground cumin, chili powder, garlic powder, onion powder, salt, and pepper.
  3. Rub the spice mix evenly over both sides of the chicken pieces.
  4. Pour salsa into the bottom of the slow cooker.
  5. Place the seasoned chicken on top of the salsa in a single layer.
  6. Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours until chicken is tender.
  7. Shred the chicken directly in the crockpot using two forks and mix with the salsa sauce. Add water or chicken broth if needed.
  8. Optional: Stir in fresh lime juice before serving.

Notes

Use medium-spiced salsa for balanced flavor. Cooking on low heat for 4-6 hours yields juicier chicken. If sauce is too thick, add water or broth. Let chicken rest 5 minutes before shredding for better moisture retention. Can substitute salsa with chunky tomato sauce or chipotle salsa for variation. Freeze leftovers for up to 3 months.
