  • 46 bone-in, skin-on chicken thighs (1.5โ€“2 pounds / 700โ€“900 grams)
  • 1 pound (450 grams) baby potatoes, halved (preferably Yukon Gold)
  • 3 medium carrots, peeled and cut into sticks
  • 2 cups (150 grams) broccoli florets
  • 1 medium red onion, cut into wedges
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1ยฝ teaspoons salt
  • ยฝ teaspoon freshly ground black pepper
  • ยผ teaspoon red pepper flakes (optional)
  • Chopped parsley or basil for garnish (optional)

Instructions

  1. Preheat your oven to 425ยฐF (220ยฐC).
  2. Pat the chicken thighs dry with paper towels to remove excess moisture.
  3. In a bowl, toss chicken with 1 tablespoon olive oil, half the garlic powder, smoked paprika, thyme, salt, and pepper. Set aside.
  4. In a large bowl, combine halved baby potatoes, carrot sticks, broccoli florets, and red onion wedges.
  5. Drizzle the veggies with the remaining 2 tablespoons olive oil, sprinkle with the rest of the garlic powder, smoked paprika, salt, and pepper. Toss well to coat evenly.
  6. Spread the veggies out on a large rimmed sheet pan in a single layer, leaving space for the chicken pieces.
  7. Place the chicken thighs skin-side up on the pan, spacing them apart for air circulation.
  8. Roast in the preheated oven for about 25 minutes.
  9. After 25 minutes, carefully flip the chicken pieces skin-side down using tongs and gently stir the veggies.
  10. Roast for another 10-15 minutes, or until the chicken reaches an internal temperature of 165ยฐF (74ยฐC) and the skin is golden and crispy.
  11. Optional: For extra crispiness, broil the pan for 2-3 minutes, watching closely to avoid burning.
  12. Remove the pan from the oven and let the chicken rest for 5 minutes.
  13. Sprinkle chopped fresh herbs over the chicken and veggies before serving or packing for meal prep.
