  • 4 tablespoons unsalted butter (melted, plus more for greasing pan)
  • 1 teaspoon vanilla extract
  • 1 cup (150g) mixed berries (fresh or frozen; blueberries, raspberries, blackberries)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 425°F (220°C). Line a half sheet pan with parchment paper and lightly brush with melted butter or spray with nonstick spray.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In a separate bowl, beat the eggs with the milk, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined; a few small lumps are okay.
  5. Pour the batter onto the prepared sheet pan and spread evenly to about ½-inch (1.3 cm) thickness using an offset spatula or back of a spoon.
  6. Bake for 12 to 15 minutes until edges are golden brown and crispy and the center springs back lightly when touched.
  7. Let the pancake sheet cool for 5 minutes to firm up, then cut into 1 ½-inch (4 cm) bite-sized squares or rectangles.
  8. While baking, combine mixed berries, honey or maple syrup, lemon juice, and water in a small saucepan. Heat over medium-low, stirring occasionally, until berries break down and sauce thickens slightly (about 5 minutes). Mash or blend if smoother sauce is desired.
  9. Serve the pancake bites warm with the mixed berry dipping sauce.
