Ingredients

Scale
  • Tortilla chips (thick-cut or restaurant-style for best crunch)
  • 1 pound ground beef or turkey (optional)
  • 1 cup black beans, rinsed and drained
  • 2 small jalapeรฑo peppers, thinly sliced (adjust based on heat preference)
  • ยฝ medium red onion, finely diced
  • 1 cup cherry tomatoes, halved
  • ยผ cup fresh cilantro, chopped (for garnish)
  • 1 tablespoon olive oil (for drizzling)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ยฝ teaspoon garlic powder
  • ยฝ teaspoon smoked paprika
  • Salt and pepper to taste
  • 8 oz shredded white American cheese or Monterey Jack
  • 1 cup whole milk
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 clove garlic, minced
  • 1 jalapeรฑo, seeded and finely chopped (optional, for extra kick)
  • Salt to taste

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Line your sheet pan with parchment paper or lightly grease it to prevent sticking.
  2. Prepare the meat (optional): In a medium skillet over medium heat, add 1 tablespoon olive oil. Brown 1 pound of ground beef or turkey, breaking it apart as it cooks. Season with chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Cook until no longer pink, about 7โ€“8 minutes. Drain excess fat and set aside.
  3. Make the queso blanco: In a medium saucepan, melt 2 tablespoons unsalted butter over medium heat. Stir in 2 tablespoons all-purpose flour and cook, whisking constantly, for about 1 minute to form a roux.
  4. Slowly whisk in 1 cup whole milk, continuing to stir until the mixture thickens slightly, about 3โ€“4 minutes.
  5. Add 8 oz shredded white American cheese a handful at a time, stirring until completely melted and smooth. Stir in minced garlic and chopped jalapeรฑo if using. Taste and season with salt as needed. Keep warm on very low heat, stirring occasionally.
  6. Arrange tortilla chips in a single layer on the prepared sheet pan. Scatter cooked meat evenly over the chips, followed by black beans, sliced jalapeรฑos, diced red onion, and halved cherry tomatoes.
  7. Drizzle the homemade queso blanco generously over the nachos, aiming for good coverage but not drowning the chips.
  8. Bake in the preheated oven for 8โ€“10 minutes, or until the queso is bubbly and the chips at the edges turn golden and crispy.
  9. Remove from oven and sprinkle chopped fresh cilantro over the top for a fresh burst of flavor. Serve immediately for the best crispiness.

Notes

If queso thickens too much before baking, gently reheat with a splash of milk to loosen. Avoid piling chips too thickly for best crispiness. Oven temperatures vary; watch for bubbly cheese and golden edges. For vegetarian version, skip meat and add extra beans or veggies. Gluten-free and dairy-free adaptations possible with substitutions.
