These crispy egg rolls are stuffed with smoky pulled pork and a creamy, spicy jalapeño popper filling, perfect for quick and satisfying game day snacks.

  • 2 cups shredded pulled pork (leftover or store-bought)
  • 8 oz cream cheese, softened
  • 23 jalapeños, seeded and finely chopped
  • 1 cup shredded sharp cheddar cheese
  • 2 green onions, thinly sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • About 12 egg roll wrappers (square preferred)
  • About 4 cups vegetable oil (for frying)
  • A few tablespoons water (for sealing wrappers)

Instructions

  1. In a large bowl, combine pulled pork, softened cream cheese, shredded cheddar, chopped jalapeños, sliced green onions, garlic powder, and onion powder. Mix until creamy and well incorporated (about 5 minutes).
  2. Lay out egg roll wrappers on a clean surface, keeping unused wrappers covered with a damp towel to prevent drying.
  3. Place about 2 tablespoons (approximately 30 grams) of filling near the bottom corner of each wrapper. Fold the corner over the filling, fold in the sides snugly, then roll tightly toward the opposite corner. Moisten the top corner with water to seal the egg roll.
  4. Pour vegetable oil into a frying pan or deep skillet to a depth that allows egg rolls to float (about 4 cups). Heat oil over medium-high heat to 350°F (175°C).
  5. Carefully place 3-4 egg rolls into the hot oil without overcrowding. Fry for 3-4 minutes per side or until golden brown and crispy, turning gently with tongs.
  6. Remove egg rolls and drain on paper towels or a cooling rack. Let rest for a minute before serving.

Notes

Do not overfill egg rolls to prevent breaking during frying. Seal wrappers well with water. Maintain oil temperature at 350°F for best results. Fry in small batches to avoid sogginess. Egg rolls can be assembled and frozen uncooked; fry from frozen adding extra cooking time. For a milder version, substitute jalapeños with poblano peppers. For gluten-free, use rice paper wrappers and bake instead of fry.
