Ingredients

Scale
  • 2 ยฝ cups (315 g) all-purpose flour
  • 2 ยฝ teaspoons baking powder
  • ยฝ teaspoon baking soda
  • ยฝ teaspoon salt
  • ยพ cup (150 g) granulated sugar
  • ยฝ cup (115 g) unsalted butter, melted and slightly cooled
  • 1 cup (240 ml) buttermilk, room temperature (or 1 cup milk + 1 tablespoon lemon juice or vinegar)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ยฝ cups (225 g) fresh or frozen blueberries
  • 2 tablespoons coarse sugar (turbinado or sanding sugar)

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC) and grease a jumbo muffin tin or line with paper liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and granulated sugar until evenly combined.
  3. In a separate bowl, whisk melted butter, buttermilk, eggs, and vanilla extract until smooth and glossy.
  4. Pour wet ingredients into dry ingredients and gently fold with a rubber spatula until just combined; batter should be lumpy.
  5. Carefully fold in blueberries, being gentle to avoid breaking them.
  6. Scoop batter into prepared muffin cups, filling each about ยพ full.
  7. Sprinkle about 1 teaspoon of coarse sugar evenly over each muffin.
  8. Bake for 22-26 minutes, or until tops are golden brown and a toothpick inserted in the center comes out clean. Start checking at 22 minutes.
  9. Let muffins rest in the tin for 5 minutes, then transfer to a wire rack to cool completely to keep sugar topping crisp.

Notes

Do not overmix the batter to avoid tough muffins; fold just until combined. Use room temperature eggs and buttermilk for best rise. Frozen blueberries work well and help keep the batter from turning purple. To keep sugar crunch topping crisp, cool muffins on a wire rack and store at room temperature in an airtight container. Avoid refrigeration. Reheat in oven to restore crispness. If muffins brown too quickly, tent with foil halfway through baking.
