  • 2 ½ cups (315g) all-purpose flour
  • 1 tablespoon baking powder
  • ¼ cup (50g) granulated sugar
  • ½ teaspoon salt
  • ½ cup (115g) unsalted butter, cold and cubed
  • ¾ cup (180ml) heavy cream
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (150g) fresh or frozen huckleberries
  • 2 teaspoons lemon zest
  • For the glaze:
  • 1 cup (120g) powdered sugar
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon lemon zest
  • 12 tablespoons milk or cream

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, whisk together flour, baking powder, sugar, salt, and lemon zest.
  3. Add cold, cubed butter and cut into the flour mixture using a pastry cutter or two forks until it resembles coarse crumbs with pea-sized bits of butter. Do not overwork.
  4. In a separate bowl, whisk heavy cream, egg, and vanilla extract until smooth.
  5. Pour wet ingredients into dry mixture and gently mix with a spatula until just combined. Avoid overmixing.
  6. Carefully fold in huckleberries, trying not to break them up.
  7. Turn dough onto a lightly floured surface and pat into an 8-inch (20 cm) diameter circle about 1 inch (2.5 cm) thick.
  8. Cut the dough into 8 equal wedges and transfer to the prepared baking sheet, spacing about 2 inches apart.
  9. Bake for 18-22 minutes until golden and crisp on the edges, checking around 15 minutes.
  10. While baking, whisk together powdered sugar, lemon juice, lemon zest, and milk or cream until smooth and slightly runny.
  11. Cool scones on a rack for 10 minutes, then drizzle with the lemon glaze.

Notes

Keep butter cold to create flaky texture. Do not overmix dough to avoid toughness. Toss berries in a little flour before folding to prevent bleeding. Brush scones lightly with cream before baking for extra crispness. Glaze scones after cooling to prevent melting.
