Crispy Beer Can Chicken Recipe Easy Herb-Infused Skin for Perfect Flavor

A simple and foolproof method to achieve juicy meat and crispy, herb-infused skin by roasting a whole chicken upright on a beer can. Perfect for weekend cookouts and gatherings.

Ingredients

  • Whole chicken (4 to 5 pounds / 1.8 to 2.3 kg), fresh or thawed, preferably organic or free-range
  • 1 can beer (12 oz / 355 ml), lager or pale ale recommended
  • Fresh herbs (rosemary, thyme, parsley), about 2 tablespoons each, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon kosher or sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika (optional)
  • Zest of 1 lemon
  • 2 tablespoons softened butter

Instructions

  1. Remove giblets from the chicken and pat the chicken dry with paper towels (about 5 minutes).
  2. In a bowl, mix softened butter, chopped herbs, minced garlic, lemon zest, smoked paprika, salt, and pepper until well combined (about 3 minutes).
  3. Gently loosen the skin by sliding fingers between the skin and breast meat without tearing it (about 2 minutes).
  4. Spread half the herb butter under the skin, focusing on breasts and thighs. Rub the remaining butter all over the outside skin (about 5 minutes).
  5. Open the beer can and drink or pour out about half, then place the can on a stable surface.
  6. Carefully lower the chicken cavity onto the beer can so the bird stands upright (about 2 minutes). Secure with a holder if available.
  7. Preheat grill to indirect heat at 375°F (190°C) or preheat oven to 375°F (190°C) with a drip pan underneath (about 10 minutes).
  8. Place the chicken upright on the grill or in the oven. Close lid or door and cook for 1 hour to 1 hour 15 minutes.
  9. Check internal temperature by inserting a meat thermometer into the thickest thigh without touching bone; target 165°F (74°C). If not reached, continue cooking and check every 10 minutes.
  10. Remove chicken carefully from the beer can, tent with foil, and let rest for 10 minutes before carving.
  11. Carve and serve the chicken with crispy, herb-infused skin and juicy meat.

Notes

Pat chicken dry for crispier skin. Use indirect heat at 375°F (190°C). Tent with foil if skin browns too fast. Use a meat thermometer to ensure doneness. Rest chicken 10 minutes before carving. For gluten-free, use gluten-free beer or substitute with sparkling water and apple cider vinegar. Butter can be swapped with olive or coconut oil for dairy-free option.
