  • 1 cup (100 g) plain or Italian seasoned breadcrumbs
  • 1/4 cup (25 g) grated Parmesan cheese

  • 1 teaspoon paprika (sweet or smoked)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten, room temperature
  • Olive oil spray
  • For the Spicy Ranch Dip:
  • 1/2 cup (120 ml) mayonnaise (full-fat)
  • 1/4 cup (60 ml) sour cream
  • 1 tablespoon ranch seasoning (homemade or store-bought)
  • 1 teaspoon hot sauce (e.g., Frank’s RedHot), or more to taste
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon smoked paprika
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon fresh chives or parsley, finely chopped (optional)

Instructions

  1. Rinse and dry the zucchinis. Slice into thin rounds about 1/8 inch (3 mm) thick and set aside.
  2. In a shallow bowl, combine breadcrumbs, grated Parmesan, garlic powder, paprika, salt, and black pepper. Mix well.
  3. In a separate bowl, beat the eggs until smooth to create the egg wash.
  4. Dip each zucchini slice into the egg wash, letting excess drip off, then dredge thoroughly in the breadcrumb mixture, pressing lightly to adhere. Place coated slices on a plate or baking sheet.
  5. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  6. Arrange zucchini slices in a single layer in the air fryer basket without overlapping. Lightly spray with olive oil spray.
  7. Air fry for 8-10 minutes, flipping halfway through, until chips are golden and crisp on the edges. Watch closely after 8 minutes to avoid burning.
  8. While chips cook, whisk together mayonnaise, sour cream, ranch seasoning, hot sauce, cayenne pepper, smoked paprika, and lemon juice in a small bowl. Stir in chopped chives or parsley if using. Chill until serving.
  9. Serve the zucchini chips immediately with the spicy ranch dip on the side.

Notes

Slice zucchini thinly (about 1/8 inch) for best crispiness. Pat slices dry if very moist to help coating stick. Don’t overcrowd the air fryer basket; cook in batches if needed. Flip chips halfway through cooking for even browning. The spicy ranch dip flavors meld better if made a few hours ahead. To re-crisp leftovers, reheat in air fryer or oven at 375°F for 3-5 minutes; avoid microwaving.
