  • 1 cup white vinegar (240 ml), distilled preferred
  • 1 cup water (240 ml)
  • 1 tablespoon pickling salt (or kosher salt, avoid iodized salt)
  • 1 teaspoon whole black peppercorns
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Sterilize two 1-pint mason jars and prepare lids.
  2. Trim and wash the fresh green beans, choosing firm and crisp beans.
  3. Optionally blanch the green beans in boiling water for 1-2 minutes, then immediately cool in ice water to maintain crispness.
  4. In a large pot, combine white vinegar, water, pickling salt, black peppercorns, and red pepper flakes (if using). Bring to a boil to dissolve the salt.
  5. Place garlic cloves and fresh dill sprigs into each sterilized jar.
  6. Pack the green beans tightly into the jars using tongs or chopsticks.
  7. Pour the hot pickling liquid over the beans, leaving about 1/2 inch headspace.
  8. Use a funnel if desired to avoid spills.
  9. Seal the jars with lids and let them cool to room temperature.
  10. Refrigerate the jars for at least 2 days before eating to allow flavors to develop and beans to stay crisp.
