Instructions

  1. Drain the ricotta (optional but recommended): If your ricotta looks wet, line a fine-mesh strainer with cheesecloth or a paper towel, place over a bowl, add ricotta, and let drain in the fridge for 15-20 minutes.
  2. Whip the ricotta: Transfer ricotta to a food processor. Process on high for 60-90 seconds, stopping once to scrape down sides, until smooth and airy like thick whipped cream.
  3. Add the seasonings: Add 1 tablespoon honey and a pinch of sea salt. Pulse 3-4 times to combine. Taste and adjust salt if needed.
  4. Transfer to serving bowl: Use a rubber spatula to scoop whipped ricotta into a serving bowl. Spread into an even layer or create gentle swirls.
  5. Drizzle with honey: Drizzle remaining 2-3 tablespoons honey over the top, swirling to distribute.
  6. Add the pistachios: Sprinkle chopped pistachios evenly over the top. Press gently with fingers to adhere.
  7. Finish with salt and garnish: Add a final tiny pinch of flaky sea salt. If using, sprinkle fresh thyme leaves or lemon zest.
  8. Serve immediately or chill: Best served within 30 minutes. If prepping ahead, keep whipped ricotta (without toppings) in the fridge for up to 2 hours; add honey, pistachios, and salt just before serving.

Notes

Temperature matters: Let ricotta sit at room temperature for 10 minutes before whipping for creamier texture. Don’t over-whip (more than 2 minutes can make it watery). Toast pistachios if not already roasted (350°F for 5-7 minutes). If honey is crystallized, microwave for 10-15 seconds to thin. Best served at room temperature; take out of fridge 15-20 minutes before serving. Leftovers keep in airtight container in fridge for up to 3 days, but texture changes; revive by letting sit at room temperature and stirring. Store toppings separately for leftovers.
