Creamy Whipped Ricotta Toast with Roasted Cherry Tomatoes

A quick and easy recipe featuring light, airy whipped ricotta spread on toasted bread topped with sweet, caramelized roasted cherry tomatoes. Perfect for breakfast, snack, or light lunch.

  • 1 cup whole milk ricotta cheese (about 8 oz)
  • 1 pint cherry tomatoes, halved
  • 1 to 2 tablespoons extra virgin olive oil
  • 1 garlic clove, minced
  • Fresh basil leaves, torn
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Honey or balsamic glaze (optional)
  • Rustic sourdough or crusty baguette bread, sliced about ¾ inch thick

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place halved cherry tomatoes on a baking sheet. Drizzle with 1 to 2 tablespoons of extra virgin olive oil, add minced garlic, and season with sea salt and freshly ground black pepper. Toss gently to coat evenly.
  3. Roast the tomatoes in the oven for 15 to 20 minutes until skins wrinkle and tomatoes release a sweet, juicy aroma. Avoid burning; tomatoes should be soft and bursting.
  4. While tomatoes roast, transfer ricotta cheese to a mixing bowl and whip with a hand mixer or stand mixer on medium speed for 2-3 minutes until light, airy, and creamy. Optionally add a pinch of salt.
  5. Toast the bread slices in a skillet over medium heat with a drizzle of olive oil or in a toaster until golden and crisp on both sides.
  6. Spread a generous layer of whipped ricotta over each toasted bread slice. Spoon warm roasted cherry tomatoes evenly on top.
  7. Drizzle a little olive oil or honey/balsamic glaze over the toast for extra flavor.
  8. Finish by sprinkling torn fresh basil leaves over the top.
  9. Serve immediately while warm for the best texture and flavor.

Notes

Use whole milk ricotta for best texture. Whip ricotta until fluffy for a light spread. Roast tomatoes until soft and caramelized but not dried out. Toast bread until crisp to prevent sogginess. Store leftover ricotta and tomatoes separately in airtight containers in the fridge for up to 3 days. Re-whip ricotta before use and gently warm tomatoes. Assemble toast just before serving.
