  • 4 bone-in pork chops, about 1-inch thick
  • Salt and black pepper, to taste
  • 1/2 cup all-purpose flour (or almond flour/gluten-free blend for gluten-free option)
  • 2 tablespoons olive oil or vegetable oil
  • 2 tablespoons unsalted butter (or coconut oil for dairy-free)
  • 8 ounces cremini or white mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 small yellow onion, finely chopped
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy cream (or half-and-half for lighter version, or coconut cream/cashew cream for dairy-free)
  • 1 teaspoon Dijon mustard (optional)
  • 1 teaspoon fresh or dried thyme (optional)
  • Chopped fresh parsley, for garnish

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides generously with salt and black pepper. Dredge each chop lightly in flour, shaking off any excess.
  2. Place a heavy skillet over medium-high heat. Add the oil and heat until shimmering but not smoking, about 2 minutes.
  3. Add the pork chops to the pan and sear about 4 minutes per side until golden brown. Avoid moving them too much. Transfer chops to a plate and tent with foil to rest.
  4. Lower heat to medium. Add butter to the skillet. Once melted, add chopped onions and cook 3-4 minutes until softened and translucent.
  5. Add sliced mushrooms and cook 5-6 minutes until browned and moisture has evaporated, stirring occasionally.
  6. Stir in minced garlic and thyme. Cook for 1 minute until fragrant.
  7. Sprinkle remaining 2 tablespoons of flour over the mushroom mixture. Stir constantly for about 2 minutes until light golden and raw flour taste is cooked out.
  8. Slowly pour in chicken broth while stirring to prevent lumps. Bring to a gentle simmer and cook 3-4 minutes until thickened.
  9. Stir in heavy cream and Dijon mustard. Cook another 2 minutes until gravy is silky and smooth. Adjust seasoning with salt and pepper.
  10. Nestle pork chops back into the skillet, spoon gravy over them. Cover and simmer on low for 5-7 minutes until pork reaches 145°F (63°C).
  11. Sprinkle chopped fresh parsley on top and serve immediately.

Notes

Do not overcrowd the pan when searing pork chops to avoid steaming. Let chops rest after searing to keep them tender. Adjust broth to thin or thicken gravy as needed. Dijon mustard adds subtle tang and complexity. For gluten-free, substitute flour with almond or gluten-free flour. For dairy-free, use coconut oil and coconut cream or cashew cream.
