This creamy ricotta & berry parfait is a quick, no-cook breakfast that layers rich ricotta with juicy berries and a touch of honey. Ready in just 10 minutes, it’s a satisfying and beautiful way to start your day.

  • 1 ½ cups (360g) whole milk ricotta cheese
  • 2 cups (300g) mixed berries (strawberries, blueberries, raspberries), fresh or frozen
  • 23 tablespoons (30-45ml) honey or maple syrup
  • 1 teaspoon (5ml) vanilla extract
  • Zest of ½ lemon
  • ¼ cup (30g) granola
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a small mixing bowl, combine ricotta, vanilla extract, and lemon zest. Stir gently until well combined.
  2. If using fresh strawberries, rinse, pat dry, and slice. Keep blueberries and raspberries whole. If using frozen berries, measure them out without thawing.
  3. Take a glass or jar and spoon about 3 tablespoons of the ricotta mixture into the bottom, spreading it into an even layer.
  4. Scatter about ¼ cup of mixed berries over the ricotta.
  5. Repeat layers: add another 3 tablespoons of ricotta, then another ¼ cup of berries. Continue until the glass is full, ending with a berry layer on top.
  6. Drizzle about 1 tablespoon of honey or maple syrup over the top. Sprinkle with granola and garnish with mint if desired.
  7. Serve immediately or refrigerate for up to 2 hours. Add granola just before serving for crunch.

Notes

For best texture, use whole milk ricotta and drain if watery. Use frozen berries straight from the freezer to avoid a watery parfait. Let ricotta sit at room temperature for easier layering. For meal prep, assemble without granola and store in the fridge for up to 2 days; add granola just before serving.
