A quick and easy 5-minute chocolate ricotta mousse that requires no baking, no eggs, and no complicated steps. Made with simple ingredients like ricotta, chocolate, and cocoa powder, this creamy dessert is perfect for any occasion.

Ingredients

Scale
  • 15 ounces whole milk ricotta cheese
  • 4 ounces high-quality semi-sweet chocolate, finely chopped
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 cup powdered sugar, plus more to taste
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/4 cup heavy cream (optional, for a lighter mousse)

Instructions

  1. Melt the chocolate: Place finely chopped chocolate in a small microwave-safe bowl. Microwave in 20-second bursts, stirring well after each, until completely smooth. Let cool for 2-3 minutes.
  2. Whip the ricotta: Add ricotta to a medium mixing bowl. Using a hand mixer on medium speed, whip for about 1 minute until light and fluffy.
  3. Add dry ingredients: Sift cocoa powder and powdered sugar over the whipped ricotta. Add vanilla extract and salt. Mix on low speed until just combined, about 15 seconds. Scrape down sides of bowl.
  4. Incorporate melted chocolate: Pour slightly cooled melted chocolate into the ricotta mixture. Mix on low speed until fully incorporated and uniformly dark and creamy, about 20-30 seconds. Do not overmix.
  5. Taste and adjust: Taste the mousse and add more powdered sugar if desired.
  6. Optional: Fold in whipped cream: If using, whip heavy cream in a separate bowl until soft peaks form, then gently fold into the chocolate-ricotta mixture.
  7. Serve immediately or chill: Spoon into serving dishes. Serve at room temperature or refrigerate for at least 30 minutes for a firmer texture.

Notes

For best results, use room temperature ricotta to prevent chocolate from seizing. If ricotta is watery, drain through a fine-mesh strainer for 10 minutes before using. The mousse can be stored in an airtight container in the refrigerator for up to 4 days. Let sit at room temperature for 10-15 minutes before serving if chilled.
