  • 2 tablespoons (30ml) extra virgin olive oil
  • 2 tablespoons (30ml) honey
  • 2 teaspoons fresh rosemary, finely chopped
  • 1/4 teaspoon flaky sea salt
  • 1/4 teaspoon freshly ground black pepper
  • Crusty bread, crostini, or crackers for serving
  • Optional garnishes: extra honey drizzle, fresh rosemary sprig, toasted pine nuts, or red pepper flakes

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Let the ricotta come to room temperature slightly.
  2. In a small mixing bowl, stir the ricotta until smooth and creamy.
  3. Season the ricotta with 1/4 teaspoon flaky sea salt and 1/4 teaspoon black pepper. Stir to combine.
  4. Spoon the seasoned ricotta into a small baking dish or ramekin and spread into an even layer about 1 to 1.5 inches thick.
  5. Drizzle 2 tablespoons of extra virgin olive oil evenly over the top.
  6. Drizzle 2 tablespoons of honey over the top, then sprinkle 2 teaspoons of finely chopped fresh rosemary evenly across the surface.
  7. Bake for 15 to 18 minutes, until the edges are bubbly and the top is lightly golden. For a deeper golden top, broil for the last 1-2 minutes.
  8. Remove from the oven and let rest for 2 to 3 minutes.
  9. Garnish with extra honey, a fresh rosemary sprig, and optional toppings. Serve warm with crusty bread, crostini, or crackers.

Notes

You can assemble the dish up to 2 hours before baking and keep it covered in the fridge. Add 2-3 extra minutes to the baking time if starting cold. For a dairy-free option, use a cashew-based ricotta alternative. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
