  • ⅓ cup (67g) granulated sugar
  • 1 large egg, room temperature (or flax egg for vegan option)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Shred about 1 medium zucchini to get 1 ½ cups. Place the shredded zucchini in a clean kitchen towel or paper towels and squeeze firmly to remove excess moisture.
  3. In a medium bowl, whisk together the flour, rolled oats, baking soda, cinnamon, and salt. Set aside.
  4. In a large bowl, beat the softened butter with brown sugar and granulated sugar until light and fluffy, about 2-3 minutes.
  5. Beat in the egg and vanilla extract until combined.
  6. Gradually add the dry ingredients to the wet mixture, mixing just until incorporated. Avoid overmixing.
  7. Gently fold in the shredded zucchini until evenly distributed.
