  • 2 pounds boneless, skinless chicken breasts or thighs
  • 6 cups low-sodium chicken broth
  • 3 medium carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 6 ounces egg noodles or any pasta shape (use gluten-free noodles if needed)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley (or fresh parsley stirred in at the end)
  • ½ teaspoon black pepper
  • 1 teaspoon salt (adjust to taste)
  • Optional pinch of turmeric
  • 1 tablespoon olive oil or butter

Instructions

  1. Peel and slice the carrots into ¼-inch rounds, slice celery thinly, dice the onion, and mince the garlic (about 10 minutes).
  2. In the crockpot, add the chicken breasts or thighs first, then pour in the chicken broth.
  3. Scatter the sliced carrots, celery, diced onion, and minced garlic over the top.
  4. Sprinkle thyme, parsley, salt, pepper, and turmeric (if using) evenly across the surface.
  5. Drizzle olive oil or dot butter over everything for richness.
  6. Cover and cook on low for 4 to 5 hours, or high for 2 to 3 hours, until chicken is tender and shreddable.
  7. Remove the chicken and shred it using two forks, then return shredded chicken to the crockpot.
  8. Stir in the egg noodles and cook on high for another 20 to 30 minutes uncovered, watching to prevent overcooking.
  9. Adjust salt and pepper if needed, and stir in fresh parsley if available.
  10. Serve warm.

Notes

Add noodles near the end to prevent mushiness. Shred chicken after cooking to keep it tender. Adjust salt at the end to avoid over-salting. Use a slow cooker timer to switch to ‘keep warm’ mode. For thicker broth, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir in during last 10 minutes.
