  • 1 large egg, room temperature

  • 1 1/2 cups (190g) all-purpose flour, sifted
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (120ml) whole milk
  • 1 cup (150g) fresh blueberries

Instructions

  1. Brown the butter: Place 6 tablespoons (85g) of unsalted butter in a medium skillet over medium heat. Stir frequently as the butter melts, then starts to foam and turn a golden brown color, about 4-5 minutes. Remove from heat and let cool slightly (about 5 minutes).
  2. Preheat the oven to 375ยฐF (190ยฐC). Line your muffin tin with paper liners or lightly grease it.
  3. In a large mixing bowl, whisk together the browned butter, 3/4 cup (150g) granulated sugar, 1 large room-temperature egg, and 1 teaspoon vanilla extract until smooth and glossy, about 1-2 minutes.
  4. Add 1 1/2 cups (190g) sifted all-purpose flour, 2 teaspoons baking powder, and 1/2 teaspoon salt to the bowl. Stir gently to combine until no dry streaks remain.
  5. Pour in 1/2 cup (120ml) whole milk and fold into the batter carefully until smooth.
  6. Gently fold 1 cup (150g) fresh blueberries into the batter, being careful not to overmix.
  7. Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
  8. Bake for 18-22 minutes until muffins are golden on top and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely or enjoy warm.

Notes

Use a light-colored pan to brown butter to easily see the color change. Stir constantly to avoid burning. Fold blueberries gently to prevent bursting and purple batter. Tent muffins with foil if browning too quickly. Store in airtight container up to 3 days or freeze for longer storage.
