  • 1/2 cup milk (120 ml) or almond/oat milk for dairy-free
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup brown sugar (70 g)
  • 1/4 cup ketchup (60 ml)
  • 1 tbsp Dijon mustard

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC).
  2. Grate the carrots and zucchini using a box grater or food processor. Place the zucchini in a clean kitchen towel and gently squeeze to remove excess moisture.
  3. In a large mixing bowl, combine ground beef, grated carrots and zucchini, chopped onion, minced garlic, eggs, breadcrumbs, milk, Worcestershire sauce, salt, and black pepper. Mix gently until just combined, avoiding overmixing.
  4. Transfer the mixture to a greased 9×5 inch loaf pan or shape into a loaf on a parchment paper-lined baking sheet. Pat evenly without compressing too tightly.
  5. In a small bowl, stir together brown sugar, ketchup, and Dijon mustard until smooth to make the glaze.
  6. Spread the glaze evenly over the top of the meatloaf.
  7. Bake in the preheated oven for 55-60 minutes, or until the internal temperature reaches 160ยฐF (71ยฐC). If the glaze browns too quickly, loosely tent the meatloaf with foil halfway through baking.
  8. Remove from oven and let rest for 10 minutes before slicing to allow juices to redistribute.
